Let them eat cake...

Hot on the heels of some of my recent culinary successes, it occurred to me last week that I ought to have a go at baking a cake. I seem to recall making Ginger Parkin from a packet mix many years ago, but that doesn't really count.

Having unexpectedly found myself at home tonight, I consulted a few websites and armed with laptop, I went forth into the kitchen and set to with making a chocolate mint sponge (one of my personal favourites).

It's fairly safe to say it didn't quite go to plan and I would have taken a photo to share the unveiling with you all except I couldn't hold the camera steady for laughing...

I don't think you are supposed to use Trebor Extra Srong Mints unless you grind them down in a pestle & mortar ( I have a Jamie Oliver Flavour Shaker which might also do the trick).

I don't know much about programming, but I'm a North Lincolnshire Nigella in the kitchen. Give me a shout if you ever need any help with your fairy cakes xx

In my best "Calendar Girls" Skipton Accent, The Chocolate Mint Sponge, wins the May Wilkinson's and the Judges Discretionary Award at the Lincolnshire, Men's W.I.

How do you make such a moist "sponge"

My mother always said,
Always line the bowl with butter and use a warm spoon, and if it's an emergency, get it at Mark's and Spencer's !!!

he he he

Hope it came out well!!

That should have been the Lincolnshire "M.I."

I really like the M&S idea, although I'll take the other tips into consideration for the next attempt. I suspect that the warm spoon was probably more appropriate for eating this one!

As for the competition, in these days of political correctness, are we still allowed a W.I or M.I.? Should they now be the P.I.? I seem to recall Magnum used to be a member...

Ginger Parkin?
Didn't she dance with Fred Astaire.

No, I think that was Clodagh Rogers.
